캐모마일처럼 겉보기에 단순하고 명확해 보이는 꽃도 조향의 맥락에서 보면 어느 정도 혼란을 야기할 수 있습니다. 우리가 "캐모마일"이라고 부르는 여러 다른 식물들로부터 에센셜 오일이 추출되기 때문입니다. 그들은 서로 비슷해 보이지만 엄연히 다른 식물입니다. 게다가, 이 식물들에서 추출된 에센셜 오일은 향과 화학적 성분 면에서 차이가 있습니다.
야생 캐모마일 (WILD CHAMOMILE)

일반적인 야생 캐모마일은 Matricaria recutita로도 정의되며 저먼(German), 헝가리안(Hungarian) 또는 블루(blue) 캐모마일로도 알려져 있습니다. 이는 매우 거대한 국화과(Asteraceae)에 속하는 한해살이풀입니다. 캐모마일은 전 세계에 널리 분포되어 있으며 가장 인기 있는 약용 식물 중 하나로 알려져 있습니다.
에센셜 오일은 주로 헝가리, 불가리아, 독일, 이집트, 슬로바키아, 영국, 벨기에, 스페인 등 다양한 지역에서 생산됩니다. 이 식물은 최소 두 가지 화학형(chemotypes)이 재배되는데, 무엇보다 (-) - α-bisabolol의 함량에서 큰 차이를 보입니다.

캐모마일의 약리학적 특성과 관련하여, 카마줄렌은 캐모마일 에센셜 오일에서 가장 가치 있는 화합물입니다. 오일의 가격은 오일 내 카마줄렌의 양에 직접적으로 의존합니다. 카마줄렌 함량이 상대적으로 적은(3-5%) 경우 킬로당 250달러부터 시작하여, 카마줄렌 함량이 35%에 가까운 비싸고 지속력이 강하며 불투명한 오일의 경우 2000달러 이상까지 호가할 수 있습니다.
에센셜 오일에서 추출된 카마줄렌은 다양한 의약품에 사용되며, 이 물질은 많은 유용한 치유 효능을 가지고 있습니다.
캐모마일 앱솔루트는 훨씬 더 높은 함량의 카마줄렌을 함유하고 있어 향에서 특유의 "고무" 효과를 냅니다. 현대적인 SFE(초임계 유체 추출, 즉 대부분 CO2 추출) 캐모마일 추출물은 더 연한 색을 띱니다.
갓 추출된 저먼 캐모마일 에센셜 오일의 향은 따뜻하고 허브 느낌이며 쿠마리닉(coumarinic)하고, 과일(특히 사과)과 달콤한 타바코의 언더톤 및 애니멀릭한 뉘앙스를 지닙니다. 따라서 캐모마일이라는 식물의 이름 자체는 고대 그리스인들의 영리한 관찰을 반영하고 있습니다: χαμαί("땅 위의")와 μήλον("사과").
저먼 캐모마일 에센셜 오일은 일반적인 향수 원료는 아니며, 리큐어의 향료나 과일 맛의 강화제로 사용하는 플레이버리스트(flavorists)들에게 훨씬 더 높게 평가받습니다.
로만 캐모마일 (ROMAN CHAMOMILE)
Chamaemelum nobile
로만 캐모마일은 Chamaemelum nobile, 또는 잉글리시나 가든 캐모마일로도 알려져 있습니다. 현재 Chamaemelum 속과 동일한 국화과(Asteraceae)의 일부로 간주되는 초본 식물입니다. 이전에는 이 식물이 Anthemis 속에 속했기 때문에, 18세기 칼 린네가 붙인 이전 이름인 Anthemis nobilis L로 여전히 찾아볼 수 있습니다. 국화과는 1911개의 속과 32913개의 종을 포함하는 가장 다양한 과 중 하나입니다.
역설적으로, 로만 캐모마일은 정확히는 캐모마일이 아님에도 불구하고 훨씬 더 자주 "진정한 캐모마일"로 불립니다.
로만 캐모마일은 야생 국화(공식적으로는 Indian Chrysanthemum, 학명 Chrysanthemum indicum 또는 관상용 정원 국화의 조상)와 약간 비슷해 보입니다. 물론 국화도 국화과에 속하지만, 캐모마일이나 카마에멜룸보다는 서양톱풀이나 쑥국화(tansy)에 더 가깝습니다.
로만 캐모마일 에센셜 오일은 저먼 캐모마일과 완전히 다른 구조를 가지고 있습니다. 성분의 85%를 차지하는 주요 성분은 안젤리카산(angelic acid)과 티글릭산(tiglic acid)의 에스테르입니다. 조향사들이 캐모마일 티의 따뜻하고 달콤한 아로마틱 및 과일 노트를 만들 때 사용하는 것이 바로 이 안젤레이트와 티글레이트입니다.
높은 에스테르 함량은 로만 캐모마일 에센셜 오일을 매우 확산력이 좋게 만들지만, 동시에 불안정하게 만듭니다. 오일은 주로 영국, 벨기에, 프랑스, 헝가리에서 생산됩니다.
로만 캐모마일 에센셜 오일은 카마줄렌과 다른 아줄렌 함량이 훨씬 적지만, 오일을 푸르스름하게 만들기에는 충분합니다. 향수 제조사들은 색이 진한 원료를 종종 선호하지 않습니다. 시간이 지남에 따라 오일은 밝은 색을 잃을 수 있습니다. 심지어 강렬한 푸른색을 띠는 저먼 캐모마일 오일조차 숙성되면 카마줄렌의 일부를 잃고 색이 옅어집니다.
로만 캐모마일은 에센셜 오일 특유의 묘한 약용의 쓴맛 때문에 널리 알려진 캐모마일 티를 제외하고는 향료로 자주 사용되지 않습니다. 하지만 향수, 특히 오래된 클래식 향수에서는 그 향을 맡을 수 있습니다.
모로칸 캐모마일 (MOROCCAN CHAMOMILE)
Ormenis multicaulis
또 다른 향수 캐모마일인 모로칸 캐모마일 Cladanthus mixtus가 있습니다. 이 한해살이풀은 보통 Cladanthus 속으로 분류되지만, 정원사들에게는 로단테뭄(rhodanthemum)으로 알려져 있을 수 있습니다. 조향업계에서는 Ormenis multicaulis로도 알려져 있습니다.
모로칸 캐모마일은 지중해 지역이 원산지입니다. 북아프리카(모로코, 알제리, 리비아, 튀니지)와 유럽(스페인, 이탈리아, 그리스, 프랑스)에서 흔히 볼 수 있습니다. 북미 지역에도 귀화되었습니다.
모로칸 캐모마일 에센셜 오일은 신선한 허브 느낌의 아로마틱한 향을 지닌 노란색 액체입니다. 또한 약간의 캠포러스(camphorous)한 뉘앙스와 달콤하고 기분 좋은 발사믹 언더톤을 가지고 있으며, 애니멀릭한 측면이 있는 앰버 및 코스투스(costus)를 연상시킵니다.
이 에센셜 오일은 대량의 α-pinene(약 15%), trans-pinocarveol(로만 캐모마일 오일에서도 발견됨), 다양한 테르펜 및 테르페노이드인 limonene, sabinen, borneol, bornyl acetate, cadinene, D-germacrene, β-bisabolene, β-caryophyllene 및 그 산화물, camphene 등의 화합물을 함유하고 있습니다.
식물학적 및 화학적 관점에서 모로칸 캐모마일은 저먼 및 로만 캐모마일 모두와 공통점이 거의 없습니다. 마찬가지로 조향에서도 한 종류의 캐모마일을 다른 종류로 대체하기는 어렵습니다.
유럽의 전통적인 캐모마일 티는 로만 캐모마일로 만듭니다. 그 가벼운 플로럴 프로필은 사과 향과 훌륭하게 조화를 이룹니다. 이것이 프랑스 향수와 조향사들 사이에서 캐모마일 어코드를 만들 때 사과 노트가 거의 필수적으로 요구되는 이유입니다.

캐모마일은 주로 다음과 같은 아로마틱 구성의 일부로 사용됩니다: cK Escape, Cerutti 1881, Clinique Aromatics Elixir, Yohji Essential, Clive Christian V 및 No. 1 Twist Chamomile, Bond №9 Park Avenue, The Merchant of Venice Daisy Bloom, 그리고 Amouage Beloved 등이 있습니다.
