유럽 연합 집행위원회(European Commission)는 2017년 초부터 특정 향료 성분의 사용에 대한 새로운 규정을 적용했습니다. 생산자가 라벨에 표시해야 하는 알레르기 유발 물질의 수가 26개에서 89개로 늘어났으며, 아트라놀(atranol), 클로로아트라놀(chloroatranol) 및 하이드록시이소헥실-3-사이클로헥센 카복사알데히드(HICC)의 사용이 전면 금지되었습니다. 아트라놀과 클로로아트라놀은 오랜 수난을 겪은 오크모스의 성분입니다. 하지만 너무 당황하지 마십시오. 아트라놀과 오크모스는 완전히 같은 것은 아니니까요.
마지막으로 언급한 성분인 HICC는 향수 애호가들 사이에서 리랄(lyral)로 더 잘 알려져 있습니다. 이 성분은 은은한 알데히드와 우디한 색조를 띤 부드러운 플로럴 향(은방울꽃, 시클라멘, 약간의 라일락을 연상시키는 향)을 지니고 있습니다. 유럽 연합 집행위원회의 눈 밖에 난 또 다른 은방울꽃 향료는 부틸페닐 메틸프로피오날(BMHCA), 즉 릴리알(lilial)입니다. 2015년 9월, SCCS(소비자 안전 과학 위원회)는 3년 후에는 릴리알이 포함된 모든 포뮬러를 재배합해야 한다는 보고서를 발표했습니다.
지난 몇 년 동안 향수 업계의 거의 모든 이들이 리랄과 릴리알의 대체제를 찾는 데 매진했습니다. 놀라운 일이 아닌 것이, 리랄과 릴리알은 패키지만 봐도 알 수 있듯 수많은 향수의 원료로 사용되어 왔기 때문입니다. 몇 년 전에 생산된 향수라면, 그 성분 중에서 이 물질들 중 적어도 하나는 발견될 확률이 거의 100%에 가깝습니다.
금지된 리랄과 릴리알을 무엇이 대체할지 논의하기 전에, 은방울꽃 향료의 역사에 대해 잠시 살펴보겠습니다.
은방울꽃 향을 지닌 향료의 역사는 100년도 더 전으로 거슬러 올라갑니다. 은방울꽃에서 천연 에센셜 오일과 에센스를 얻으려는 많은 시도가 있었지만, 이러한 노력들은 은방울꽃과는 아무런 관련이 없는 향이 나는 물질을 얻는 데 그쳤습니다. 그래서 그런 "에센셜 오일"이나 "앱솔루트"의 가치는 거의 없습니다. 안타깝게도 모든 꽃이 전통적인 방법으로 그 향기를 포착할 수 있는 것은 아니며, 은방울꽃이 바로 그중 하나입니다. 그래서 에르네스트 보(Ernest Beaux)가 말했듯이, 모든 희망은 화학자들에게 달려 있었습니다.
은방울꽃을 연상시킨 최초의 원료는 하이드록시시트로넬알(Hydroxycitronellal)이었습니다. 조향사들은 종종 이 원료를 애정 어린 마음으로 그저 '하이드록시'라고 부릅니다. 1905년 독일의 화학자 헤르만 크놀(Herman Knoll)이 처음으로 합성했습니다. 그 직후, 주요 향료 생산 업체들이 유사한 제품을 선보였습니다. 예를 들어 1906년 지보단(Givaudan)은 로린(Laurine)을 출시했고, 1908년 피르메니히(Firmenich)의 카탈로그에는 시클로시아(Cyclosia)가 등장했습니다(이 두 물질은 불순물 프로필과 부산물에서 차이가 있었습니다). 하이드록시시트로넬알은 이러한 향기 프로필을 지닌 최초의 물질이 되었습니다. 밝고 플로럴한 은방울꽃 향과 백합의 뉘앙스를 제공하며, 수박에 가까운 그린하고 워터리한 측면과 가벼운 트로피컬 노트를 동시에 지니고 있습니다. 이 원료는 1913년에 탄생한 우비강 켈끄 플뢰르(Houbigant Quelques Fleurs) 덕분에 유명해졌습니다(이 향수는 최초의 알데히드 향수 중 하나로도 알려져 있습니다). 하이드록시시트로넬알의 또 다른 유명한 찬가이자 영광의 시간은 물론 에드몽 루드니츠카(Edmond Roudnitska)의 작품인 디오리시모(Diorissimo)(1956)입니다.
또 다른 유사 성분인 시클라멘 알데히드(Cyclamen Aldehyde)는 1919년 우연히 얻어졌으며, 1929년부터 윈스럽 케미컬 코퍼레이션(Winthrop Chemical Corporation)에서 생산되었습니다. 스위스 회사 지보단에 의한 시클라멘 알데히드 생산은 1950년대에 시작되었습니다. 시클라멘 알데히드는 하이드록시시트로넬알과는 달리 강력하고 밝은 플로럴 향을 지니고 있으며, 실제 시클라멘을 연상시킵니다. 그린하고 달콤하며 은방울꽃, 린덴, 그리고 은은한 대황(rhubarb)의 뉘앙스를 가집니다.
꽤 오랜 시간 동안 하이드록시시트로넬알과 시클라멘 알데히드라는 두 물질이 은방울꽃 향료의 전부였지만, 20세기 후반에 상황이 완전히 바뀌었습니다. 자, 이제 이 기사의 주인공들부터 시작해 보겠습니다.
1952년, 전소련 합성 및 천연 향료 연구소의 블라디미르 로디오노프(Vladimir Rodionov) 연구팀은 릴리알알데히드(lilial aldehyde)라고 불리는 화합물을 얻었습니다. 하지만 스타니슬라프 보이케비치(Stanislav Voytkevitch)는 "모스크바의 조향사들은 릴리알알데히드의 진가를 알아보지 못했다"고 설명했기에, 소비에트 과학자들이 이 발견으로 국가 화장품 및 향수 산업에 얼마나 영향을 미쳤는지는 알 수 없습니다. 잘 알려진 사실은 1956년 6월 11일, 지보단이 이 조합에 대한 특허를 획득하고 릴리알(lilial)이라는 짧은 이름을 붙였다는 것입니다. 그리고 이것이 조향계에서 은방울꽃의 새로운 역사의 출발점이 되었습니다. 이 원료의 주요 상표명을 몇 가지 언급하자면 lilestralis, lilyall, lysmeral, mefloral, aldehyde MBDC 등이 있습니다. 릴리알은 특유의 파우더리한 측면과 스파이시한 커민 뉘앙스 때문에 앞서 언급한 원료들과 차별화됩니다.
두 번째 주인공인 리랄(lyral)은 1960년에 등장했습니다. 미국 회사 IFF가 이를 합성하여 제조하기 시작했습니다. 다른 회사들은 다음과 같은 이름으로 이를 생산합니다: cyclohexal, kovyral, landolal, lanyral, leerall, lydoucal, lysinal, mugonal, kovanol.

화학적인 관점에서 볼 때 위에 언급된 모든 원료가 알데히드라는 사실을 눈치채셨을 것입니다(샤넬 No.5 같은 향수에서 발견되는 "퍼퓸 알데히드"와 혼동해서는 안 됩니다). 오랫동안 은방울꽃 향을 내려면 분자에 알데히드 그룹이 있어야 한다고 생각되어 왔습니다. 그러나 추가적인 조사를 통해 유사한 향기 프로필을 가진 다른 원료들이 많이 있다는 사실이 밝혀졌습니다.
은방울꽃 향료는 전체 향료의 약 20%를 차지하며, 그렇기 때문에 이 분야의 어떠한 변화나 금지도 매우 심각하게 받아들여집니다. 하지만 특정 시점까지는 하이드록시시트로넬알, 리랄, 릴리알이 가장 중요한 은방울꽃 향료였습니다.
알데히드 그룹이 없는 최초의 은방울꽃 알코올류 원료는 20세기 후반에 발견되었습니다. 조향에 있어서 알코올은 알데히드보다 안정성이 높기 때문에 항상 더 선호됩니다. 하지만 모든 은방울꽃 알코올이 순수하게 "은방울꽃"스러운 것은 아니며, 종종 밝은 장미의 특성을 가집니다. 예를 들어 코라놀(coranol)은 리날로올(linalool)과 매우 유사하다고 묘사되며, 더 지속력이 좋은 대체제로 제안되곤 합니다. 강력하고 선명한 은방울꽃 프로필을 가진 알코올을 찾는 것은 여전히 향료 화학자들에게 핵심 과제 중 하나입니다. 2001년 지보단은 이러한 노력의 결과물 중 하나인 슈퍼 뮤게(Super Muguet)를 선보였습니다.

미국 회사 IFF는 스타플뢰르 40(Starfleur 40)과 같은 상당히 많은 은방울꽃 향 원료를 생산합니다.
기존 향수에서 리랄과 릴리알을 대체해야 하는 경우를 위해 회사에서 정교하게 만든 몇 가지 베이스 "대체제"들이 있습니다. 이러한 베이스들은 향수, 세제, 화장품 및 헤어케어 제품에 따라 다릅니다. 구체적인 레시피에 관심이 있다면 인터넷에서 쉽게 찾을 수 있습니다. IFF는 이를 숨기지 않는데, 이는 다소 놀라운 일입니다.

지보단은 리랄의 완벽한 대체제인 마호니알(Mahonial)이라는 캡티브 원료를 가지고 있습니다. 마호니아(Mahonia)는 매자나무과(Berberidaceae)의 약 70종의 상록 관목으로, 은은한 향이 나는 노란 꽃을 피웁니다. 때때로 마호니아는 은방울꽃 관목이라고 불리기도 합니다. 공식을 보면 마호니알은 구조적으로 리랄과 매우 유사함을 알 수 있습니다. 이것은 이른바 세코(seco) 구조[라틴어 secare(자르다)에서 유래, seco는 부분, 절반을 의미]의 예입니다. 향기에 있어서 마호니알은 리랄과 가깝지만, 이를 아는 사람들에 따르면 지속력은 훨씬 더 뛰어납니다. 그리고 물론 리랄의 모든 부정적인 특징에서 자유롭습니다. 언급해야 할 또 다른 지보단의 원료는 듀피칼(Dupical)입니다. 현재 알려진 모든 은방울꽃 향료 중 가장 강렬하고 지속력이 뛰어나다고 할 수 있습니다. 위에서는 은방울꽃 향료인 γ-불포화 알데히드에 대한 결과를 볼 수 있습니다(특허는 받았지만 대량 생산되지는 않는 것으로 보입니다). 지보단에는 님피알(Nympheal)이라 불리는 캡티브 "클래식" 은방울꽃 알데히드도 있습니다.
은방울꽃 향료는 파인 퍼퓨머리뿐만 아니라 수많은 향료 제품에도 필요하기 때문에, 홈케어 제조사들도 지속력이 좋고 안전한 새로운 원료 찾기에 동참했습니다. 예를 들어 헨켈(Henkel)은 릴리알의 대체제로 위에 보여진 구조의 옥사졸리딘 유도체에 대해 특허를 냈습니다. 그들은 이 물질이 릴리알과 가까운 향을 내면서도 지속력은 훨씬 뛰어나다고 말합니다. 주의 깊은 독자라면 이것이 상당히 무거운 성분(Da가 500에 달하여, 이론적으로는 아무런 냄새가 나지 않아야 함)이라는 것을 알 것입니다. 아마도 실비알옥사졸리딘(silvialoxazolidine)의 향기는 이 화합물이 서서히 분해되면서 나타나는 실비알(silvial)에 의해 결정되는 것으로 보입니다. 여기서 그 지속성이 나옵니다(시클라멘 알데히드 유도체인 시클라멘옥사졸리딘도 있습니다).
