오래전 중앙아메리카 인디언들에게 알려졌던 바닐라는 아메리카와 신대륙의 '발견'과 함께 코코아와 더불어 전 세계 미식가들의 마음을 사로잡게 되었습니다. 마야인들, 그리고 이후의 아즈텍인들은 바닐라를 '틀릴록시틀(tlilxochitl)'이라 불렀고 주로 왕실 초콜릿 음료에 사용했습니다. 유럽인들은 17세기에 바닐라를 발견하고 좋아하게 되었습니다. 그들은 바닐라를 많은 질병의 치료제로 사용했고, 그 향과 맛 덕분에 음식과 음료의 첨가물로도 사용했습니다. 바닐라는 타당한 이유로 강력한 정력제로 간주되었습니다.
오늘날 모든 사람이 바닐라의 향과 맛을 알고 있지만, 진짜 바닐라 추출물은 매우 비싸고 생산 효율이 낮기 때문에 주로 합성 제품을 접하게 됩니다. 바닐라 향은 여러 성분으로 구성되는데, 그중 주요 성분은 바닐린(vanillin)과 피페로날(piperonal, 헬리오트로핀)입니다.
바닐라는 일종의 난초과 덩굴식물로, 세계에서 가장 인기 있는 변종인 바닐라 플래니폴리아(Vanilla planifolia)는 멕시코가 원산지입니다. 이 식물에는 약 100여 개의 변종이 있지만, 그 맛과 향 때문에 광범위한 상업적 생산에 사용되는 것은 바닐라 플래니폴리아와 바닐라 타히티엔시스(Vanilla tahitiensis) 두 가지뿐입니다.
바닐라 플래니폴리아는 오늘날 멕시코와 남미, 카리브해, 인도양의 섬들, 인도네시아 등 열대 기후에서 자랍니다. 멕시코에서 자라는 바닐라는 원산지에서 자란다는 사실 덕분에 최고 중 하나로 간주되지만, 그곳의 생산량은 많지 않습니다.
바닐라 버번(Vanilla Bourbon)은 인도양의 섬이자 바닐라 최대 생산지로 여겨지는 마다가스카르(연간 1,000톤의 꼬투리 생산), 코모로 제도 및 레위니옹 제도에서 생산됩니다. 동일한 변종이 아프리카와 인도네시아에서도 재배됩니다. '버번'이라는 이름은 왕가의 이름을 기리기 위해 명명된 레위니옹 제도의 옛 이름인 버번 섬에서 유래되었습니다. 버번 바닐라는 바닐라 플래니폴리아와 동일한 종이지만, 새로운 생산 환경은 맛과 향의 품질에 분명한 영향을 미칩니다.
바닐라 버번은 풍부한 향과 맛을 지니고 있습니다. 이러한 종류의 바닐라는 건조 과정 중에 꼬투리에서 결정 형태로 생성되는 천연 바닐린 생산에 사용됩니다.
천연 바닐린 생산은 길고 비용이 많이 드는 과정입니다. 바닐라 꼬투리는 아름다운 녹황색 및 황색 바닐라 꽃에서 형성되고 자랍니다.
자연 상태에서 꽃은 곤충과 벌새에 의해 수분되지만, 농장에서는 수작업으로 이루어집니다. 초록색 꼬투리는 8~9개월 동안 가지에 남아 있으며, 수확 후 또 다른 반년 동안 건조됩니다. 건조 과정에서 흰색 결정인 바닐린이 생성됩니다.
타히티 바닐라는 프랑스령 폴리네시아(타히티) 섬에서 자라며, 더 희귀하고 비싼 변종입니다. 그 맛은 바닐라 플래니폴리아보다 순하다고 여겨지지만, 향은 더 강합니다. 바닐린은 적게 함유하고 헬리오트로핀을 더 많이 함유하여 과일 같은 뉘앙스를 줍니다.
향수 성분 중에서 볼 수 있는 프렌치 바닐라(French vanilla)는 특별한 종류의 바닐라가 아니라, 진짜(천연 바닐라와 동일한) 강렬한 맛과 향을 지닌 품질 라벨의 일종입니다. 이 이름은 프랑스 아이스크림 레시피에서 유래되었습니다.
